I have not written in a while as I was away visiting daughter and son-in-law in Maine, friends and family in Upstate NY , and learning some new things to make for you to enjoy.
Let me start by saying Fair Meadow is no longer FOR SALE. I have called this place home for 20+years. I have met so many wonderful friends,now family here, I could probably make more money to live on, and not work as hard as I do, with a 9 to 5 job, but I would not be able to bake bread or share " pizza time" with anyone.
A lot goes in to making the bread I make, I start "building" my starter on Monday to be able to bake late Thursday or early on Friday. That means, twice a day ,EVERY day I have to increase the amount of starter I will need to use as leavening when I begin mixing my doughs for the twice a week I bake. A "normal" baking day is at least a twelve hour, nonstop day.
When someone says to me that" $5.00 is a lot for a loaf of bread" , what can I say to them? Do I explain the cost of firewood, the 3 hour round trip to the mill I use exclusively to get my ORGANIC flour, the other trips I take to get spring water, not to mention the other ingredients I source, as well as the mess my kitchen is after mixing, folding, stretching , shaping, proofing dough?! No, I just look at them and smile. I care about the breads, scones, cookies, rolls, pizza,essentially, everything I make. Could I do it cheaper? Yes. Would I be able to live with doing it the cheaper way? No.
I try very hard to use as much local ingredients as possible, I am so very thankful for all the local farms who "do what they do". I know where that food is coming from.I digress. If you want cheaper ,it can be found, if you want to help your fellow neighbors, farmers, local producers, buy local, and I don't mean your local chain store!
You are welcome to come by Fair Meadow on baking days to purchase bread, that was what I did in the beginning(4 years ago!).
I am also toying with the idea of a "bread delivery route". Much like the old milkman days, I would deliver your weekly bread to you! Any takers?
I am offering basic bread baking classes again Saturday September 28 from 1:00-3:30, and again on Saturday October 5 from 1:00-3:30. For $15 you will learn the basic artisan bread process from start to finish and be able to take your loaf home with you! You MUST register in advance for this! Call 704 436 2962 to register.
I will also be offering a day long session on planning, building, and using your own wood fired brick oven. This class will be $50.00 per person. The class will be later in October. Watch for details or call the above number if you are interested.
