The oven will be hot and I will be baking those wonderful brick oven pizzas!
Made with home made dough & home made sauce. Be sure to order yours so I prepare enough for you !

Will be sampling breads Saturday from 9:30- 12:30 at Piedmont Farmer's Market on Winecoff School Rd in Concord, come by and try some of my breads!!

I have been kicking this idea around for awhile now and I need input from ALL of you.Please read on and let me know what you think....

I would like to try to do pre-order pizza one night a week, probably Friday. You let me know how many pizzas you want , tell me what time you will swing by and get them, and I will have them ready. They will not be as involved as what you get when you come for an "event" here, but it will be the same dough, sauce, cheese, and a topping or two. How interested are you? I have to have a FIRM commitment , otherwise what would I do with all the pizza you don't pick up ???Cost$10-15

Will be doing pizzas(pre-order only) for : Superbowl Sunday Feb 5 2012

Also plan on having a Valentine's Day event(Tues Feb 14) , St. Patrick's Day event(Sat Mar 17), and whatever else I can come up with.

I am organizing a sourdough bread baking class, as well as a wood fired oven class, and a pizza class. If you are interested in these let me know , more than likely they will be on a Saturday in the coming months.

I deliver bread to Moose Pharmacy Mt. Pleasant every Monday and to Albemarle Nutrition every Tuesday or Wednesday. Please remember to patronize these stores. Also hope to have bread available at Piedmont Farmer's Market(Winecoff) soon!

Also remember if you have a group that would like to make this your "destination" before or after an outing I would be happy to do pizza for you! Call and we can set it up!

Wow, time really flies doesn't it?!
   Baking tomorrow and on Thursday for those holiday orders to be filled. If I do not have your order you will just have to "take your chances" at Moose Pharmacy , Mt. Pleasant , and Albemarle Nutrition for your holiday breads.
   I will say I am baking dill rye, seeded rye, whole wheat, ciabatta, sourdough cinnamon rolls, and some yeast rolls.

Thanksgiving week...

WOW!! Can you believe it is almost my favorite holiday??? I have been baking , and filling orders since Thursday, and had a 6 hour pizza event in between! I LOVE it though, because it makes me feel like I am helping to provide good tasting, more "pure" foods for folks I consider"family" For your family you do only the very best,right?
Yeast rolls, cranberry orange sourdough loave, pumpkin sourdough loaves, and gingerbread! Oh, yes and honey whole wheat sourdough, sourdough rye(no seeds, more mild flavor), and plain, unadulterated sourdough white! I start mixing and thinking and I can't stop!!!
I will be taking Christmas or Holiday baking orders too. I have had requests for cinnamon rolls, ciabatta with dipping sauces, pizza dough, as well as various cookies. I can make trays for parties of breads, and sauces, or cookie assortments, as well as sourdough muffins, cinnamon rolls, or what I call-BREAKFAST trays, good for you things that go with coffee or hot tea! Let me know how I can help make your holiday baking easier. Oh yea, I do killer peanut clusters, as well as some awesome fudge!!Hope to do one more pizza event in December , so watch for it. Our youngest, daughter Hannah, is getting married here at Fair Meadow on Saturday, to her Patrick. They met while studying abroad in St. Petersburg,Russian Federation.The ceremony will be in the pine forest in front of the house at 2:00pm, reception will follow in the pavilion. Bonnie Shoaf of Sweets2Eat is making all 9 cakes, as well as the three flavors of tarts. Muddy Boots Farm's, Kent and Amy Lowder are providing hay bales, pumpkins, and various other items of support! Needless to say we won't be baking bread THIS week (or next,vacation), but we will be soon, as well as having another pizza event.
Congratulations to our Hannah and Patrick!! We love you!

We still have some spaces left for pizza this Saturday evening. Beginning at 5, 6, or 7, or anytime in between. Come have some of our awesome pizza and make some new friends, or see some old friends. Here's how this works:

    Bring yourself and some friends
    Bring your beverage and your ice
    Bring a donation(between$12-15) to help cover our costs(wood, flour, cheeses, toppings, sauce, evoo, paper products etc)
    Like at the lineup of pizza and topping list we provide
    When a pizza you like is coming out, go to the oven table and try a piece
    Watch for the next pizza you like to come out, try another a piece
    We cook until everyone is full , so no one goes away hungry
    Relax in the pavilion, you are family.
    If you have a request let us know, and if you would like to bring a salad or dessert to share please do
    Saturday is the last day for us at Stanly County Farmer's Market this year.
    If you are interested in weekly or bi-monthly delivery of our breads in Albemarle, Concord, or Salisbury, please let us know and we will start that in November.

Fall is upon us..

Wow I can't believe September is almost over, days are getting shorter, and the weather feels like fall. Thankfully it has stopped raining, although we need it. It is kinda sad to think the farmer's market will be ending soon, have met so many new people, and made some wonderful new friends. It gives such satisfaction to see the same folks come to buy bread . To know it is enjoyed and appreciated makes it all worthwhile. Hopefully we will have enough interest to have a delivery spot in Albemarle and Concord once a week, as well as Moose Pharmacy in Mt. Pleasant in the coming winter months for our bread.

Looking forward to our pizza events starting again. So many have asked about how we do this, and why, and how much it costs, and what happens during the event and who comes. We started the "Friday Night Pizza " almost 30 years ago. We always wanted to see how our pizza would be even better in a wood fired oven, therefore 3 years ago we were in Vermont and New Hampshire looking at other ovens. We knew what we wanted and Jay was able to obtain the plans he liked, and began gathering materials. In our wildest dreams did we ever think we would be baking bread ad having pizza "events" for so many wonderful people!
We try our hardest to use the very best ingredients, we try to make a pizza that we know is the best around, and we like people. Cost we are not a restaurant, this is our home, we invite you for pizza, and you become part of our family. We have said many times if we could we would give the pizza away, but we cannot afford to do this. We hope that those who come and can afford to give generously do so. We know times are hard right now, and we just want as many people as possible to be able to enjoy themselves, meet some new friends, and have our fabulous pizza! We are very blessed, and want you to be also when you are here. Remember your donations pay for a lot more than just pizza! Thanks all!

We can't believe it is September, although it has been a very busy year for us.We are so thankful for all the wonderful things our children are doing, and looking forward to the cooler weather, and yet another wedding. We continue to bake, and sell our breads at Moose Pharmacy in Mt. Pleasant, and at Stanly County Farmer's Market in Albemarle. Thanks again for your support!
We are baking tomorrow as well, no pizza though, sorry. As all our ingredients get more expensive, as well as buying wood, we need to have at least 15 people to host a "pizza event" in order to make it feasible.We will continue to do private parties, so if you have an event (birthday, anniversary, etc) give us a call and we will provide our yummy pizza in the pavilion!

Can you believe it's July?

Thanks to everyone who came out to see me at the Stanly County Farmer's Market this morning! It makes all the effort that is put into making bread worthwhile to see so many wonderful people enjoy the bread! Speaking of effort....when the day is set to bake , the starters(Ralph-rye, Wily-white, and Mutt-mixture) are pulled out of the fridge and the flour and spring water are added, and the building begins.This "feeding" or building is done twice a day for the next three days, on the morning of day 4, it is time to start mixing.
On a typical baking day, the mixing takes about two hours, meanwhile, outside the fire is being tended , so that the oven will be ready , when the bread is. Truly, Fair Meadow Bakes bread baking is a labor of love and good bread!

Our eldest son, Zachariah and his Kristen are getting married today!! After an awesome rehearsal dinner last night, with the help of Amy and Kent Lowder of Muddy Boots Farms, and Bonnie and Roger Shoaf of Sweets 2 Eat, and other wonderful friends Carolyn,Josh, Mary, and Lyn, we had a great time! Thanks to all the family and friends who contributed to our pizza and wing feast! Love you and congratulations Zach and Kristen!

Bread, pizza, graduations, and weddings

   A few things of interest, the pavilion is finished but of course the chairs we purchased don't work with the floor, so we are now rethinking that idea. It is a work in progress, but looks wonderful, quite the addition to our pizza events.
   I know many of you want to know when the next event will be , we want to see you as much as you want our pizza, but we are having lots of private parties, in other words people with a minimum of 10 in their group have requested a day and time, and we make pizza for them. We had one last week, one this week, and three more coming in June!
   We are still baking bread and delivering to Moose Pharmacy Mt. Pleasant and are at Stanly County Farmer's Market on Saturdays.
   When you attend a pizza event you may wonder about what goes in to all of "Fair Meadow", here are a few examples,

The oven , built by Jay 2 years ago, cost us a little more than $3000.
Wood to fire the oven, very generous friends donate hardwood if it is available, otherwise we have to buy it.Jay gets to split it!
The dough, made by Pat ,contains high gluten flour, extra virgin olive oil, sea salt, spring water , and is made for each event we have, based on the number of people we will have.
The sauce, also made for each event by Pat, with local Muddy Boots Farms tomatoes, if possible.
Toppings, and cheeses, etc, etc

So do you have the idea? We base our suggested minimum donation on each person having 4-6 slices. So if you eat more , donate more, if you can, Money is tight for most folks and we want to continue to have pizza for all!

Anniversary, baking, pizza, spring, pavilion !!!!

Wow, this week is the 2 year anniversary of the first oven fire, and more importantly Jay and I will celebrate 28 years of wedded bliss(?) tomorrow! Time really flies quickly. Tonight we start our celebration with a "Friday Night Pizza" event, 30 + folks have sent messages that they will be here, the oven is loaded with wood, dough and sauce are ready and waiting!

What else would we do on our anniversary tomorrow, but BAKE BREAD! Since the oven will be hot from the pizza event tonight we will bake 50 loves of bread (more or less) and some of those awesome sourdough scones! In between that we will work on the picnic (pizza) pavilion!

Everything is blooming, growing, garden looks great, herbs are growing, the pool is open( I have even been swimming twice!), and we are getting ready for even more fun (and busy) times ahead.

Jay's wonderful mom arrives on May 12!
Our youngest daughter, Hannah graduates(with honors) from Wake Forest on May 16!
Our oldest son, Zachariah and the love of his life Kristen, get married on June 17!
In August our son Elijah, and daughter Hannah, both enter grad school at the University of North Carolina at Chapel Hill!
On October 22, here at Fair Meadow, Hannah and the love of her life Patrick get married!

In between all of that we will still be baking, and hosting private pizza events here. We are very blessed with so many wonderful friends, and family, God has truly been good to us. Thank you for your continued support of Jay and I , and our dream of Fair Meadow Bakes!

Like I tell each person that comes here to our home(or I try to) you come here as a friend, and maybe a stranger, but you leave Fair Meadow as family, and we treasure each and every one of you.

So springlike here at Fair Meadow today. In between shaping, and baking 35 loaves of bread , 16 sourdough scones, and 8 dozen cookies, Jay and I put rafters up on the new pavilion! Busy day! Enjoyed having "old" "family" members here for pizza event last night and meeting 4 new friends! Will let you know when the next pizza event is, or if you and 9 of your friends(minimum) want your own pizza event let us know! Delivering bread and scones to Moose Pharmacy tomorrow.

Things are blooming and coming up out of the ground all over Fair Meadow. New calves are being born in the pasture, geese on the pond, and lots of birds I haven't seen in months.

Pat tore the ACL in her knee on Valentine's Day, and is recovering just in time for she and Hannah to go to San Francisco for Hannah's spring break!

Look for our upcoming bakes and pizza events. The weather is improving and there are new things happening here at Fair Meadow. We will update you soon.

We will be baking tomorrow for the last time before Christmas. Ciabatta , yeast rolls, and cinnamon roll, and some scones, will be going to Moose Pharmacy, as well as our traditional breads. Available here at Fair Meadow also, after 4:00pm. Merry Christmas!!

Our breads are now available for sale at Moose Pharmacy in Mt. Pleasant. Local grown tomatoes, eggs, meats, and other items are soon to be available also. We are so thrilled to be part of the movement to support local producers and hope you will be too!

Pizza tomorrow afternoon starting at 2:00pm, call if you have not reserved your spot just so we have enough dough, sauce, and cheese. Bring your drink and a donation to help cover our costs.

We saw lots of SNOW at Historic Stagville yesterday, and lots of nice people! Thanks to all who came out.

We are having our pizza event on Saturday December 11th starting around 4:00pm. Come out and enjoy our wood fired brick oven pizza. Bring a drink and some friends (or meet some new ones here) and enjoy! Let us know if you are coming by Friday morning so we can prepare enough dough and sauce! 704-436-2962 Look forward to seeing you!

The new roof is over the oven, kitchen inspection is completed, and we have stocked up on flour. Ready to bake for the holidays! Baking on Tuesday November 23 for Thanksgiving. Wonderful yeast rolls using an old family recipe.Call or email to order. Also baking some sweet and savory treats.

We have been busy doing the stuff you normally do when spring finally arrives. Elijah and I worked on the patio surrounding the oven on Monday. It looks good, now to cover the oven at some point so it will be easier to bake in all kinds of weather. We enjoyed pizza night last week so much and hope to have you come for our next one. We are booking groups for pizza so call for any plans you would like to make. We are baking as follows(subject to change) :

Our signs are disappearing around town, I have been to the DOT garage but they were not there. I know they are nice signs and we are glad you like them, but we can't let people know where we are if they aren't up! FRIDAY NIGHT PIZZA

Jay has a rare Friday off so we will host pizza night this Friday April 16 starting at 6:00pm. Please let us know if you plan on attending(no later than Thursday) so that we can make enough dough and sauce. As usual B.Y.O.Beverage. We provide everything else. and just ask for a donation to help defray our cost!

Wow, this stuff is something else! Anyway, enjoyed all of our "family" on Easter Sunday thanks to everyone who came! I will be managing the oven, and baking bread this Friday(April 9th). Jay has his "real" job to go to, so he won't be baking! We also need to make a trip to Lindley's Mill next week to get flour. So long story short, if you would like bread, try to come on Friday or you may have to wait a bit. The picture on the top is the back of our home, the oven on the right. The picture on the bottom is a pizza baking in the oven!!

Tried some of the new techniques we learned on Saturday, the bread looks (and tastes wonderful). We made :

Jay's Traditional(20% rye)
Fair Meadow(20% wheat)
Whole wheat multi grain
Five grain
Ciabatta
Demi-baguettes

Baking again , if needed next week for Easter. Pizza on Easter Sunday!!!

Will be attending Historic Stagville Summer Saturday Events in June, July, and August. Second Saturday of each months, good family day trip. Check out their website.

Had a great time learning new techniques and meeting other "bread people" in Asheville this past weekend. I was just so thrilled to see so many other folks like Jay and I, be excited over learning new recipes and methods for baking bread.
It was so interesting to see all these people jockeying for position to buy bread from other bakers(that's how you got your workshop tickets) in the parking lot of Greenlife grocer. To be able to see and try breads from other bakers, both bigger and smaller than us and share knowledge and information! The weather was great and I know Jay and I can't wait to bake this week on Thursday!

Our son Elijah was home for a few days and told me I should write more of our process at Fair Meadow. I bake, I don't write. When I was younger I thought I would write novels, but the wanting and thinking doesn't make for the reality. I envy those who write, I wish I could , instead, I bake.
For a long time we had Friday night pizza at our house. Our friends knew if it was Friday we would be making pizza for ourselves, our kids, and for anyone else who came along. We enjoyed the time with family and friends , pizza and wine, laughter and solving world problems. All this in our kitchen in Mt. Pleasant. I think it reminded us of the friends and family that we left in Upstate New York when we moved here almost 20 years ago. Everyone that would come to the house, would come to the kitchen, and open the old gas oven door to see what goodies I had baked, they knew they were more than welcome to sample whatever they found in that oven "breadbox". The Friday night pizzas were a way to have that familiarity here I think. The dough recipe was one my sister had and it was wonderful.
I always wondered what it would be like to cook pizza in a brick oven, how different it would be. Oh what we are finding out!! So come along, I promise to be a better writer, and tell some of our story of pizza and friendships, and what food does to bring us all together in such a way. I hope you enjoy the trip!

   As you can tell there is a lot happening at Fair Meadow this week. Tomorrow we will be baking Jay's traditional sourdough, some of our rustic country french, and a new bread for Fall, apple walnut sourdough!!
   We have new signs that we will be putting up ,so look for them if you live in the area.
   Our neighbors keeps cows in our pasture out back, and we got to see three new calves born this week!
We started out this week getting firewood, both the pine, that we do our first two fires with ,and the oak, that the third, and final fire takes. I am sure we will have pizza tomorrow at some point come by for lunch!
    Looking forward to cooking our Thanksgiving meal in the oven. Happy Fall!

Trying our first sourdough batards today, also baguettes, and some sourdough banana bread. Had gingerbread sourdough waffles for breakfast. The sourdough is ALIVE! After a wonderful BIG birthday yesterday it is good to be baking on this wonderful fall like day. Pictures to follow of all our successes! Thanks to all who took bread the other day also.

Where does "Fair Meadow" come from?

Fair Meadow was the name of Grandpa Hoffman's home in upstate New York. The original sign from the property , is hanging in our front yard, and we hope the Fair Meadow name will honor someone whom Jay loved and respected very much. Grandpa Hoffman passed away in 1979. Jay and I know he would be very proud of our efforts, and of our commitment to baking the very best breads and pizza we can.We use Lindley Mills Organic flours, and Cold Spring's pure spring water.

How did this all begin?

This all started with a dream of mine and Jay's to create our fantastic pizza in a new and even better way! Our friend's have always said,on many a Friday night pizza night, "You guys should open a pizza place", well this is our answer to that. Jay started the oven last fall and the picture posted of me is the very first fire back in April! That was before the brick was even put on. We are baking twice a week and Jay is taking bread to those at work who ask for it. The pizza is even better than we dreamed it would be , and yes it is different than we make indoors, but SO GOOD!
